When we decided to expand beyond the West Coast, we looked for a place that appreciated craft, community, and serious comfort food. Indiana wasn’t just a dot on the map—it was the destination.

The Journey East

Bringing a West Coast staple to Indiana is about more than just shipping spices; it’s about translating a vibe. Oakland has a grit and artistic soul that resonates surprisingly well in Indianapolis. We found that Hoosiers don’t just want “hot” chicken—they want chicken with a story, prepared by people who obsess over the perfect crunch-to-heat ratio.

Carmel: The Flavor Bridge

Carmel, in particular, has become a culinary bridge for us. It’s where refined palates meet bold street food. We noticed that when locals search for the best restaurants Carmel IN, they are often met with the same old polished, predictable options. We wanted to disrupt that.

We brought our graffiti-laden walls, our pounding hip-hop playlists, and our sandos dripping with comeback sauce right into the heart of the Carmel Arts & Design District. It’s a contrast that works. The community here has embraced the spice with open arms, proving that you don’t need to be on the Pacific Coast to appreciate a perfectly fried, tear-inducing tender.
